I have a new youtube channel to share with you all!!  I usually workout at home the two days my son is at daycare (while I am on maternity leave – this routine will change when I go back to work on those days).  I have been trying to find short intense workouts to ensure I can get my workout in without having to stop for a screaming newborn!  I was always skeptical of short intense workouts.  I always thought they didn’t get the job done and you needed to workout for a long time to lose weight; however, this go round I am proving myself wrong!  I have been able to lose weight at the same rate if not faster than I did after baby #1 – and I am working out fewer days a week.  I have to admit my husband has been right – a short intense workout is just as effective!  I now present to you a great workout duo that will give you the opportunity to get a good sweat in 20 minutes (go for the more challenging option)!!

kicking it into gear!

It was supposed to be a rainy day today.  Woke up, sun is out!  IT IS GOING TO BE A GREAT DAY.  We have the doors open, listening to John Cougar Mellencamp, rolling around on the floor, playing with baby toys and taking in some fresh spring air!  What relaxing things do you like to do with your kids and/ or family as the outside temperature starts to warm up?

Last night we made a last minute executive decision to go to our local fave mexican joint – we are valued customers at this point thanks to their booths and loud music to drain out any potential meltdowns at the dinner table.  After some delicious fajitas I decided to workout.  I wasn’t sure if my stomach was going to make it through; I surprised myself.  I was happy I got in a night sweat before heading to bed.  My husband kindly gave our son a bath and I did a combination workout.  Below are four videos, you can do them in any combination – each workout is approximately 30 minutes.  I did #2 and #4 last night.  Switch em up and you won’t get bored.  There are so many different movements the routines go by so fast you will have no idea you’ve already blown through one of the workouts by the time it’s done!

However, I do not take her post workout two scoops of protein powder in water recommendation.  I am not a fan of protein powders, they are loaded with crap!  If you want to make a shake (using egg whites ONLY powder) make sure it’s a meal replacement or a low-cal snack, you can quickly gain weight by having a protein packed drink after your workouts.  Here is a healthy green shake you could enjoy before or after a workout – I enjoyed this for lunch the other day, scrumptious!

These recipes make two 16 ounce servings – I cut them in half.

KEY LIME (page 157)

2 frozen bananas

1 cup coconut ice

3 tbsp unsweetened coconut flakes

2 tsp fresh lime zest

1/3 cup freshly squeezed lime juice

2 tbsp hemp seeds

1 tbsp ground flaxseed powder

1/4 tsp camu powder

1/4 tsp spirulina powder

1 tbsp lucuma powder

1 cup coconut milk

1/2 cup water

blend together in the nutribullet

ROSEMARY ORANGE (page 99)

1/4 cup dried white mulberries

1/4 cup raw cashews

3 cups baby spinach

2 tbsp mashed avocado

1 tsp orange zest

1.5 tsp minced fresh rosemary

1.5 cups orange juice

2 cups ice

blend together in the nutribullet

As you will notice the minimal amount of avocado makes a smoothie smooth, thick and creamy.  It was shocking to see how just a tablespoon or two can take away the icey texture of a smoothie.

jump jump jump SQUAT.

Get ready to kill it with this heart pumping work-out!  I did the video below for four rounds it was a great sweat.  If you can add more reps, GO FOR IT!!! I could only do that many as the baby was only amused with me jumping around while he rolled around on the carpet for that amount of time.  He even tried doing some “laying jacks” !

Rainy day here, probably will end up doing another work-out at home since we have family in town.  It has been hard getting motivation to do home exercises, but once I am done… WOW I feel amazing!  If you are procrastinating or have “time anxiety” and watch the clock until you know it is time to do your work-out, just let it all go and go do it.  I sometimes find myself saying oh let me eat this and then digest and then I will work-out, but the reality is that I just want to be lazy right now!  AND, that is perfectly FINE!  No one says you have to work-out at a specific time.  Go be lazy!   Except, while you’re laying on the couch enjoying your down time don’t watch the clock and dwell on the dreaded workout that is yet to come.  Just enjoy the moments and then pick yourself up and pump up your heart rate!  With that being said I need to find a workout and take some of my own advice!!

In like a lion, Out like a lamb.

Welcome March!  I am hoping you bring lots of warm weather this month!! I have a full week of sweets coming up!! The following week I will switch to savory dishes – make sure you stay tuned!  I have to been going to the gym as much as possible and have supplemented in a few YouTube videos and barre classes.  It takes a while to shlep to Gold’s Gym, some nights it is easier and faster to do a workout at home.  I have also been forcing myself to try some workout classes at the gym.  I don’t like being in a classroom setting with routines to follow, because personally I am horrible at keeping up.  I never had the skills to memorize routines quickly.  When it came to school plays during the middle school and high school days I really was not one for a main character dancing around the stage.  I have pushed myself to be uncomfortable and attend the classes that involve routines that are choreographed to specific songs.  Unfortunately, for me, I have also not been able to stand in the back every class – other people seem to be just as uncoordinated as me, so it appears!!  When I don’t get my cozy corner spot in the back of the room, I realize nobody is starring at me and outwardly criticizing me, so I might as well get in a good workout and stop worrying about what others think!  Thus far I have tried the Insanity, BodyPump, BodyAttack, HIIT, and RPM cycling classes and have fully enjoyed each moment of them all.  If you are like me, attempt to go to a workout class even for half of it – just give it a try.  You might find that you enjoy jumping around a room looking ridiculous along with everybody in the class.

Today we will review a wonderful paleo granola I created.  The recipe calls for a cup of raisins, a cup of whole almonds, a cup of cashews, 1/2 cup flax seeds, 1/2 cup chopped walnuts, 1/4-1/3 cup honey and 2-3 tbsp coconut oil (you can adjust the honey & oil amount to ensure all fruit, nuts & seeds are coated with some liquid).  Mix everything together and spread out on a baking sheet lined with parchment paper.  Cook the granola at 300 degrees for 30-45 minutes – cook until the mixture does not have a sticky texture and tastes “roasted” (yes, samples are allowed).  Once cooled, break apart the big block and it will quickly resemble granola.  I sprinkled this delectable treat over some coconut cream.  Thai Kitchen makes a great full-fat coconut milk – the cream is on the top and literally looks like fage yogurt.  If you scoop the cream out you will see liquid on the bottom.  I pour this into ice cube trays and freeze the remaining part of the coconut cream.  I then will use these coconut cubes in smoothies for coconut flavor.

With the snowy days here I will be baking quite a few items; be prepared for sugar overload!!

I have been browsing my cookbook collection and have realized that I need to start using them – they’re getting dusty.  I have found myself always researching recipes online – for the obvious reason: the computer is so convenient and easy.  I have tried to remove myself from some social media to focus on “the present time” and play with my son.  With this I have felt more relaxed and have gone ‘back to the basics.’  I have begun to realize it is wonderful to flip through a cookbook.  This being said I have picked a savory and a sweet cookbook to make literally every recipe from cover to cover.  Once this is done, it’s onto the next one!  My husband loves cookbooks, he is the same way as me; he personally “likes to look at the pictures.”  I want him to get through his books too!  I encourage you to dig through your cookbook collection and start cooking some delicious dishes.

hello again!!

WOW, it has been a while since I have updated the site.  I have been consumed primarily with my more important responsibilities – such as taking care of my son 😉 . I have some news to report, I joined a gym!!  I finally took the plunge, and just got a Gold’s Gym membership.  This gym is not your ordinary gym though, they have just about everything – including a swimming pool where I can take the baby and a movie theatre I can bike or run or elliptical or sit or whatever inside of, etc etc etc.  The amenities are wonderful and I am very happy with my decision; don’t worry I will still post home work-outs and the various exercise classes I attend.  After this post I’m going to head over there and bike in the movie theatre, I’m so tired I can’t handle much stimulation from lights right now.

The next order of business, I have two updates on the food portion of this blog.  I finally tried NICE CREAM and IT WAS DIVINE.  I blended 3 frozen bananas in the food processor and topped with Enjoy Life chocolate chips.  I do have to report that this portion was very large, my husband and I shared, but you could easily make this for three people.  I thought the flavor was fantastic, the consistency was smooth and creamy – literally like banana gelato.  I’m a big fan of this treat!!!

This morning I finally indulged in a matcha green tea almond latte and again it was blissful.  I upped the matcha a bit, the recipe calls for 1/2 tsp, however, my bottle of matcha powder reads serving size as 1tsp – so I did just that!  Flavor was excellent, I even added more water to make it hotter longer and it did not lose its flavor one bit!

Wish I could stay and type longer, but I have to quickly get in my workout before I eat dinner and head to bed… mommy life.  I hope everyone is staying warm and enjoying their new year’s resolutions 🙂 !

you can drink your wine and eat it too!

Another batch of burgundy red wine flank steak was made and I was in heaven eating every bite of this meal.  Please refer back to my first post for the initial recipe: wine infused steak… my husband added coconut sugar to this batch and wow the flavor is so much richer!  We also made other steaks, which weren’t finished for dinner the night before – I used some pieces in this salad:

I did part 1 & 2 only yesterday – I am working my way up to a 60 min video, currently just feeling satisfied with 40 minutes (a jump from 20 minutes).  And today I engaged in this activity:

an ode to squash

Well after this divine meal I learned I am allergic to acorn squash.  I fully enjoyed preparing and devouring this dinner, however, I was not pleased by the rash and hives that had spread like wild fire from head to toe.  I am sad to say that I will no longer be posting glorious pages like this one:  SQUASH! and the one I am about to leave you with…

Stuffed acorn squash (recipe below) paired with sauteed asparagus in olive oil with salt & pepper to taste.

The recipe for the stuffed acorn squash is fairly simple, and is as follows:

Slice 1 large acorn squash in half, remove filling, cook inside facing down toward cooking sheet (coat with tin foil first), cook @ 400 degrees for approximately 30 minutes or until inside is soft.  Remove from oven, and let cool.  Meanwhile, sautee over medium-high heat (stirring frequently) 1 green pepper that has been diced with 1/4 a white onion that has been diced as well.  Use olive oil as the grease.  Once this mixture is slightly brown add approximately 1 pound of ground beef (I used 80% lean 20% fat).  After the majority of the beef is brown, removed from heat and strain the mixture (over the sink).  This will remove excess olive oil and fat that remains.  Place the strained mixture back in the pan and add the following herbs & spices (dried & ground): 2 tsp thyme, 2 tsp fennel, 1 tsp rosemary, 1 tsp sage, 1 tsp black pepper, 1/2 tsp salt, 1/2 tsp cinnamon, 1/4 tsp nutmeg, and a dash of paprika.  Next you will mix the proceeding together and add in part of the acorn squash filling (I left a thin layer of acorn squash around the skin).  Begin mushing the mixture and then pack half of the mixture in each acorn squash.  Place the cooking tray with the squash + meat back in the oven for about 10-15 minutes – this will cook the rest of the meat.
